Making your own lactose free ice cream

If you are lactose intolerant and have decide to cut milk and other dairy products in your diet. You will find out that genuine lactose free products, like ice cream, are hard to find and when you do find one it might not be the flavor you want or the taste doesn’t satisfy you. Then why not try to make your own ice cream at home. You are sure that it is 100% lactose free and flavored according to your taste.

Question:  How can you make an ice cream if the main ingredient for it is milk? Answer: Use lactose-free milk. Lactose- free or lactose- reduced milk, depending on the severity of your condition, are still dairy products made from cow’s milk, they are made lactose-free or lactose-reduced by adding lactase enzymes directly to the milk then making sure that they are thoroughly mixed. They can usually be found in supermarkets.

You may also try adding milk substitutes. Plant-based milks are inherently lactose free, like the soy milk, rice milk, almond milk, hazelnut milk, oat milk, hemp milk, and horchata. With the variety of options available you can now choose a substitute that approximates the texture and sweetness of regular milk. The dairy industry realizing this problem has created low-lactose and lactose-free dairy products.

Twenty-five to sixty-six percent of ice cream is made of milk and the remainder is made up of cream, fruit etc. Now about the “cream” part of ice cream, you can use a non-dairy whipped topping. Using whipped topping will create volume, texture and flavor of quality ice cream. Goat’s milk is a great substitute for cow’s milk, though goat’s milk still contains lactose, many people who are lactose intolerant are able to drink it and shows no symptoms. It might be because goat’s milk is easier to digest.

By regularly consuming small amounts of dairy products several times a day for a period of time, some people have been able to break down small quantities of lactose effectively and eventually reintroduced to dairy products. Although this method is not recommended to people who have underlying or chronic illness, because some illness damage the intestinal tract thus will not be compatible with lactase enzymes.

The intolerance to lactose varies from person to person, not everyone with lactase deficiency will experience the same symptoms. That is why some people who are lactose intolerant can have small amounts of lactose in their diet and not get affected by it.

For those with severe to extreme lactose intolerance, making homemade ice cream can be a fun and satisfying treat for yourself. You can try surfing the internet for recipes or you could try substituting the milk products in the recipe with lactose free products.
